It is my firm belief that all cooks/bakers, both experienced and otherwise, need to have a chocolate chip cookie recipe in their baking arsenal.  Everyone has their version of “the best ever” or “world’s best” or what have you…yes…I am sure they are all delectable.  I suppose it depends on what one looks for in their favorite cookie.  I love mine slightly crispy on the outside, yet soft in the middle.  And they MUST MUST MUST be on the thicker side.  I just think that looks pretty IMHO.  I am a cookie snob and I am not afraid to admit it. And let’s be honest, I think most of us have some very slightly snobbish tendencies in us to some degree or another…whether it be a certain brand of food or clothing, the kind of car you like, etc.  Me…I have a few that I shall share with you…aside from admitting the above mentioned, I also am a bit of a:

Wine Snob…not snobby in that it has to be expensive, but snobbish in that I will only drink it out of a wine glass, stemmed or stemless, and I really do love my chardonnay chilled to 52 degrees, but I will drink it at almost any temperature and still enjoy all it has to offer my “snobby palate”.  I have had $7.00 bottles of wine and I have also had one (on a cruise) that was slightly over $200.00.  I know, horrible, BUT, it was a VERY special cruise and it was a once in a lifetime purchase.  It was delicious.  As are the cheap(er) bottles of wine we love.  But the glass…that is where my snobbishness comes in.

Spice Snob~we reeeeeeally love Penzey’s.  They are so much better than store bought, however we do use SOME of those, but, Penzey’s is by far priced much better than those from the grocery store and the difference is truly amazing.

Cheesecake Snob~ok, I am not a snob about cheesecake. As you know, I love me a good cheesecake in almost any form (except with apples, why is that?) and my penchant for cheesecake runs deep within my soul.

Bling (szchuzzzzz)~the only thing I am a snob about regarding bling is that, well, I MUST have it.  Affordable or otherwise, this girl loves it, needs it, must have it.  Sparkly things just send my small little brain into “bling love”. And “szchuzzzz” is just another term for “bling”, or “things that sparkle that my eyes like to look at but doesn’t sound snobbish in the least bit”…thank you Mandy for coining that term.  It’s. Just. Perfect.

I think that covers my deep dark snobby secrets. Hopefully you all will still love me~in spite of my snobbish~ness…and maybe have even learned a couple of things about me through reading this long post about…chocolate chip cookies.

I have used this recipe for almost 20 years.  Our boys grew up with these fabulous cookies as a staple in our house and I think I may have even turned them into “slightly” snobbish chocolate chip cookie aficionados .  There is a perfect balance between slightly crispy and still soft toward the middle.  Buttery, chocolately, sweet, crispy and soft…Chocolate Chip Cookie Snob perfection…at least at our house.  Enjoy!

Ingredients
  • 3/4 cup butter (cold)
  • 3/4 cup white sugar
  • 1 cup light brown sugar
  • 2 eggs (slightly beaten)
  • 1 Tablespoon Penzey's pure vanilla extract
  • 3 cups all purpose flour
  • 3/4 teaspoon baking soda
  • 3/4 teaspoon salt
  • 3 cups semi~sweet chocolate chips
Servings: cookies (approx)
Instructions
  1. Preheat oven to 350 degrees
  2. In bowl of stand mixer (or large bowl) fitted with paddle attachment, whip butter on medium speed until it comes together, approximately 1 minute, scraping sides of bowl as needed. Add sugars and mix until combine. Mixture might have small lumps of butter.
  3. Add eggs, one at a time, mixing well after each. Add vanilla and mix until combined.
  4. In separate large bowl, sift dry ingredients together. Slowly add to sugar/butter mixture on low until dough is just incorporated. Do not over~mix.
  5. Add chocolate chips and stir by hand (dough will be thick). Line cookie sheet with parchment paper and drop by teaspoonfuls.
  6. Bake 12-15 minutes, until edges start to brown. Let cool 5 minutes. Transfer to cooling rack.
