Cranberry Chicken Breast

I am sitting here, pondering…how can one make a post about chicken sound fun and interesting?  Julia Child CAN.  And she does.  I was watching a You Tube video:  Julia Child The French Chef: How To Roast A Chicken.  She is absolutely adorable and hilarious!  I love her introduction of The Chicken Sisters.  And she answers the bewildering question of how to know when a chicken is in it’s full glory of “chickendom”. She has the gift of gab and it’s music to my ears.  I don’t think MY brain can come up with very many fun, clever words.  So, I will just start by saying that this recipe is one of our many favorites.  Of all the ways to make a meal consisting of chicken more interesting, I would have never thought of putting these few ingredients together.  My friend Janie gave me this recipe years ago.  Even our once~pickiest eater Ty loves it, much to my surprise when I first made it so long ago.  We have been so busy doing one thing or another that the poor child has been living on leftovers and sandwiches for dinner (horrible mom).  He never complains.  Not once.  About a single thing.  Joj is like that also.  But that boy loves any type of food put before him.  He doesn’t discriminate, bless his heart.

So, I was feeling especially bad about dinner time, and asked Ty what sounded good for dinner…this was it.  Yay!  Easy, one pan dinner.  What a beautiful thing that is.  Joj has his own place now, which I have mixed feelings about~excited for him but sad for me~so, I am not leaving him out on the dinner decision.  He would have no preference anyways. It’s food and his mom made it. The end.  I did, however, ask him if he would like me to throw one in the pan for him.  So, back to Good Mom.

You can get away with not marinating the chicken, and it will be every bit as delicious.  But the marinating time really makes the chicken so tender and moist that it literally falls apart.  Either way, it’s fabulous.

Ingredients
  • 4 Boneless Skinless Chicken Breasts
  • 15 oz Whole Cranberry Sauce
  • 1 envelope Lipton Onion Soup Mix (dry)
  • 1 cup Catalina Dressing
Servings: Breasts
Instructions
  1. Place boneless skinless chicken breasts in 9x13 pan (I use glass)
  2. Mix all ingredients together and pour over chicken and, if time allows, marinate for approximately 2 hours (it WILL be delicious if time doesn't allow for marinating).
  3. Preheat oven to 350 degrees
  4. Cover with foil and bake for 1 hour 20 minutes
  5. Remove foil and bake an additional 10 minutes
Recipe Notes

The recipe pictured only has three chicken breasts in the pan.  They are very large, so I opted to do only three.  Four would have also been perfect with plenty of sauce for each.
