Breakfast Burritos With Sausage Gravy
These are a hearty start to your day and can be made the night before for a great, filling breakfast-on-the-go!

Ingredients
  • 8medium Eggs, beaten
  • 1pound spicy breakfast sausage
  • 2Tablespoons unsalted butter
  • 1/2medium onion
  • 115.5 ounce can Hominy*
  • 1 red pepper
  • 1 green pepper
  • 8count flour burrito shells
  • 2cups Shredded Colby/Jack Cheese
Instructions
  1. In medium bowl whisk eggs until beaten. Set aside.
  2. In large sauté pan cook sausage until no longer pink, about 5-7 minutes. Drain and set aside in small bowl. Do not rinse pan.
  3. To pan melt 2 tablespoons of butter over medium heat. Add onion and hominy, sauté until onions are translucent, about 5-7 minutes. Add red and green peppers and cook another 5-7 minutes.
  4. Return sausage back to pan, add beaten eggs and cook 5-7 minutes, until eggs are set.
  5. Warm burrito shells in microwave for about 10-15 seconds. Lay flat and fill each shell with about 1 cup of filling, top with desired amount of cheese and fold left and right sides of shell to middle of filling, then roll into burrito.
  6. Top with sausage gravy, or leave plain. Serve warm. Garnish with parsley if serving with gravy.
Recipe Notes

*hominy is actually corn, but is very similar to cubed potatoes and can be found in most grocery stores in the vegetable aisle (see Amazon link above). Potatoes can be substituted.
