Chipotle Barbecue Sauce

This post should, in all honesty, be written by Joe.  It’s all his.  I can take no credit whatsoever~though he would disagree…everything is always “ours”, whether I am either sous~chef or the one in charge.  Today, I was more or less playing the role of sous, on a coffee break.  He is a true genius in the kitchen, and has taught me so much in our short 9 years of wedded bliss.  He is not afraid to just dive right in and “create”, which is something he is AMAZING at.  With all the confidence in the world.

 So, we were shopping and ribs were on sale.  Purchased.  Joe’s mind starts working before we even hit the check out.  One of the billions of reasons I love and adore him.  Mentally going over the checklist in his brain, making sure we have all necessary ingredients.  And, it’s a go.

Homeward bound, we discuss what might be a great barbecue sauce for these little rib babies.  In the kitchen, he is off and running.  I sit back, watching him mix, taste, mix, taste some more (because I am on my “coffee break”, after all).  Then asks me to come and taste it to see what it is missing (how cute is that…he is right on, as I knew he would be).  But, that is how we always work together in the kitchen.  Asking the other to taste it and see “what’s missing”.  It’s great to pick each others brains.

Out of all that, this fun delicious amazing barbecue sauce was born.  You can slather it on ribs, chicken, or pork.  The possibilities are endless.  I can’t even begin to describe all of its deliciousness.  It is one we are sure you will come to love!  We hope you enjoy this sauce as much as we do!

An amazing, tangy, slightly spicy sauce that is very versatile.

Ingredients
  • 2 cups ketchup
  • 3/4 cup honey
  • 1 cup apple cider vinegar
  • 1 cup Water
  • 2 Tablespoons Worcestershire Sauce
  • 2 Tablespoons mustard powder
  • 3 Tablespoons brown sugar
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon Cayenne Pepper
  • 7 1/2 oz can Chipotle peppers* in Adobo Sauce
Servings: Quarts (approx)
Instructions
  1. In medium bowl, combine all ingredients and blend with immersion blender or food processor.
  2. In medium sauce pan, bring to a boil. Reduce heat and simmer for approx. 15 minutes.
  3. Let cool, then store in quart~sized jars.

*Chipotle peppers can be found in the "International" aisle of most supermarkets.
