Fajita Chicken Burrito Bowls
Delicious and easy! These burrito bowls are rather quick to throw together and can be adjusted to each persons liking. Even picky eaters will love this meal!

Ingredients
  • 3cups cooked brown rice
  • 3 Boneless Skinless Chicken Breasts
  • olive oil
  • 1ounce packet fajita seasoning
  • 3cups salsa (any brand/kind)
  • Salt and Pepper
  • 1pound mini sweet peppers seeded and slivered
  • 2medium Vidalia onions (slivered)
  • 110 ounce can of Rotel tomatoes with green chiles(do not drain)
  • 115 ounce can of black beans, rinsed
  • 115.25 ounce can of yellow corn, drained
  • 4 jalapeƱos (seeded, diced)
  • 2cups shredded co-jack cheese
  • 1bunch Cilantro
Instructions
  1. Preheat oven to 400 degrees.
  2. On foil lined sheet pan sprayed with cooking spray place chicken breasts in the middle. Lightly drizzle olive oil on both sides then sprinkle fajita seasoning on each side and lightly rub into chicken. Season with salt and pepper and top with 1/2 cup of salsa.
  3. Place peppers on one side of chicken, onions on the other. Drizzle with olive oil, season with salt and pepper and mix lightly with hands.
  4. Bake in oven for 30 minutes. Let chicken rest for 5 minutes. To bowl add 1/2 cup of rice, half of one chicken breast, peppers and onions. Top with Rotel tomatoes, black beans, corn, jalapeƱos, cheese and more salsa if desired. Season with salt and pepper to taste and garnish with cilantro. Serve immediately.
