Hot Chicken Casserole

Hot Chicken Casserole

chickendish04While shopping with my friend/best and most amazing  blogger ever Mandy, over at Kitchen Joy, we came across the most darling teeny tiny bright orange casserole dishes and, perched atop the lid, was a little chicken.  We both saw them at the same time, looked at each other thinking “Seriously?  How could something so cute be sitting there all by its lonesome little self without a crowd of women fighting over it?”.  I think we both kind of sort of squealed ever so quietly with a little bit of excitement.  There was only one set of two,  and she told me that I NEEDED them.  First, I am not one to argue, second, I really think she knows best, so into my cart they went. That’s a true friend.  Now, to make a yummy chicken dish to properly welcome these adorable dishes to our kitchen.  I came across this recipe while looking through old recipes of mine while Joe was away on business, and thought, yep, perfect.  This dish is super easy, has amazing flavor and is also wonderful reheated.  It makes a 9×13 pan, so there is plenty to go around.  And the best thing about this dish is that though it may have a “small~ish” list of ingredients, it requires only a few steps of prep, and while the pasta is cooking you can get everything else ready to go.  I’ve made this many times over the years, but I must say, I do believe it tasted MUCH better served out of my chicken dishes!

Sláinte!
