My idea of the start to a perfect morning is coffee in hand and listening to the news to catch up on the latest goings-ons in the world. That is my nourishment. A little bit of caffeine and I am good. To. Go. Not so much Joe. Nope. That man needs a good, well-rounded breakfast to get his day started. And by well-rounded, I mean something to the likes of a three course meal (or even four sometimes). Eggs, meat, potatoes with onion, toast and tea. That is the perfect start to his day. If I ate like that, this girl would be napping every day and getting not so much done around here. And napping, that is just one thing I can NOT do! My brain never stops turning, except maybe if I had a “well-rounded breakfast”. Then maybe I could. This breakfast recipe is true genius in the fact that most of it can be prepped the night before if need be and just reheated/assembled in the morning, or you can assemble them the night before (wrap in plastic wrap and store in refrigerator), heat in microwave for about 1 minute the morning of and off you go about your busy day! Without the gravy of course. Joe likes it both ways. It tastes every bit as good on day two…maybe even a titch better. I have been promising him for three weeks I would get this on the blog because his friends-from-afar have been anticipating its arrival on the world-wide web, as he has been raving about this recipe. I HAVE in fact eaten this…for lunch…so I am here to tell you it is just scrumptious. And filling. And not low-calorie/fat. And that is perfectly fine. Life is too short to not eat good food and drink good wine…my motto. You can eat this plain, or with a great big huge ladle of our Sausage Gravy blanketing it. I gotta say, with the gravy, well let’s just say there are no words for the little parcels of creamy, meaty, cheesy culinary joy your palate will be graced with. Whew! And I’ll just go right on ahead and leave that there for you to ponder…
