Creamy Mexicana Dip

It’s hotter than Hades here in Michigan.  And, when it gets this hot, the very last thing I want to do is turn on the oven.  So, putting my little brain to work, I was thinking of making a quick easy lunch~one that did not include a salad of any sort, and a sandwich just wasn’t going to cut it…well, dip and I go together just beautifully…and today was a “dip” kind of day.  I am off for the week (yay!!), and dip is perfect when it’s just me for lunch…

My inspiration for this came from many many years ago in my wild single days (not really…I was the good child in the family).  A former friend of mine and I would, after a fun night out on the town, stop at our local 7~11 store and pick up some Creamy Taco Dip…I have no clue what was in it…back then it didn’t matter…it just mattered that it tasted good.  And good it was.  This recipe is about as close as I can remember it tasting.  The friend is long gone, as is our favorite Creamy Taco Dip.  But, I think this one is perhaps a titch better even.  You can use whatever taco seasoning and salsa you prefer…we just love our salsa and Alton Brown’s Taco Potion #19  so that is what I used…and you can add anything else your palate desires…enjoy!!

Ingredients
  • 8 ounces light cream cheese softened
  • 1 cup plain greek yogurt
  • 1 Tablespoon Alton Browns Taco Potion #19
  • 1 cup salsa
  • 3 teaspoons Lemon Juice
  • 1/2 teaspoon garlic salt
Servings: Cups
Instructions
  1. Mix cream cheese and greek yogurt well with hand mixer. Add remaining ingredients and mix well.
  2. Chill for at least an hour. Serve with tortilla chips.
